I haven’t posted a recipe in awhile… not because I’m not cooking but because life just got incredibly hard. I lost my desire to write and bake and cook interesting meals. But I’m back now and I’m so excited for the recipes I have planned!!!
I’m going to start off with two Summertime recipes featuring the very versatile veggie: Zucchini
This weeks recipe:
Zucchini and Chicken Bake
Here’s what you need!!

3 Chicken Breast, boneless and skinless
4 Zucchini, diced
1 Stick of Butter, 1/2 of a cup for reference
1/2 Yellow Onion, diced
10.5 oz Can of Cream of Chicken
1/2 Cup of Sour Cream
1 Box of Stuffing
**Note: cook the chicken first**

I boiled my chicken. I didn’t realize that it needed to be cooked ahead of time, so I was frantically trying to get this chicken to boil. I undercooked it, too, in order for it to not be overcooked when put in the bake. You could also use a rotisserie chicken to give the bake a little more flavor… and ease in making this recipe.

Dice your zucchini. I cut mine in half, then cut the half in half and then cut it into small pieces. You don’t have to do it that way, you just don’t want really big pieces of zucchini.

Melt your butter and then combine it with the stuffing. Making sure the stuffing is coated fully. Set aside a 1/2 cup of the buttery stuffing to top the bake with.

Add the zucchini, stuffing, and cut chicken to a bowl. Combine fully. Then add your cream of chicken and sour cream (I don’t have a picture of this step… I’m still getting back into the swing of things).

Pour mixture into a greased (I used Pam) 9×13 baking dish and top with the reserved 1/2 cup of stuffing. Bake in a 350 degree oven for 40-50 minutes!!

It was soooo good!! Definitely a great summer comfort food that was pretty easy to make. The zucchini dicing was the hardest part and I probably would have only used three zucchini instead of four. It was just A LOT of zucchini.
