I’m all about low carb swaps right now and I was so excited when I saw this idea!! I love potatoes. Any way you make potatoes, I’m in love. While potatoes aren’t a “bad” food, you should eat them in moderation. SO!! I wanted to have a veggie that allowed me to be “satisfied” with not eating potatoes but still be a healthy option.
Enter: Roasted Radishes
Let’s get to it.

This is such an easy recipe I almost feel like I’m cheating!!
Here’s what we need:
1 Bag of Radishes, quartered
Garlic, to taste
Salt
Pepper
Olive Oil
Everything is really to taste, if you like more garlic, do it!! If you like less pepper, do it. It’s really up to you!!

Combine the radishes, olive oil, garlic, salt, and pepper in a big bowl. Make sure the garlic is combined really well.

Pour them on a lined baking sheet and place it in a 425 degree oven for about 15 minutes.

Then they’re done!! Look how pretty they look!!! Here’s the part I’m sure you’ve all been waiting for: do they taste like potatoes.
No.
However, it was such a great veggie side and they tasted phenomenal!! While they didn’t remind me of potatoes or took care of my roasted potato itch, I’m not mad that we made them.

I served mine with a roasted chicken thigh covered in flavorful spices and it was such a filling meal. I hope that you give them a try, they will definitely surprise you.
